Rainbo Energy Balls
Ingredients
- 1/2 cup raw walnuts
- 1/2 cup raw pumpkin seeds
- 1/2 cup coconut shreds
- 1 cup dates
- 1/8 tsp sea salt
- pinch of cinnamon
- 2 tsp Maca powder
- 2 tbsp chia seeds
- 4 full droppers 11:11 tincture (or more!)
Superfood Toppings
- Beet powder
- Turmeric
- Bee pollen
- Maca
- Chaga and Reishi powder
- Matcha
- Spirulina
- Blue Majik
Directions
- Start by soaking your dates in warm water. If they are already juicy dates then you can skip this step
- While dates are soaking for 15-20 minutes, place walnuts and pumpkin seeds into your food processor and grind until they form a meal
- Place meal into mixing bowl
- Add dates to food processor and grind until they are a paste. With a spatula, remove dates from food processor and add to mixing bowl with nuts and seeds
- Place all other ingredients into the mixing bowl and blend everything together, I like to use my hands
- Form 6-8 balls, depending on how big you make them
- Roll energy balls in superfood mixtures to create vibrant, nutrient rich balls
- Store in fridge or freezer
- Enjoy! These are great as snacks on the go, when you're craving sweets, before a work out, or as dessert!
