Stewed Strawberry Rhubarb

Stewed Strawberries and Rhubarb 🍓

Ingredients

  • 3 cups strawberries
  • 10-15 stalks rhubarb
  • 1 tbsp lemon juice
  • 1-2 tbsp Forest Juice medicinal mushroom maple syrup

*please note you can use any amount of strawberries and rhubarb and it will always turn out delicious :) you can also use and experiment with lots of different fruits!

Directions

    1. Place a medium sauce pan on the oven with 1-2 tsp filtered water + 1 tbsp lemon juice
    2. Add fruit: strawberries and rhubarb
    3. Place heat on medium high, mix consistently and bring to a boil
    4. Once at a boil, bring heat to low and let simmer for 15-20 minutes
    5. The fruit will slowly start to come apart, the water will evaporate
    6. Stir consistently (every few minutes) at stove so that fruit don't get stuck to bottom of pot
    7. After 15-20 minutes, your fruits will be stewed and well combined
    8. Add maple syrup to taste
    9. Store in fridge for 2-3 weeks, or freeze if making a larger batch
    10. If you want to thicken you can add chia seeds but not necessary
    11. Delicious to eat on: oats, pancakes, waffles, yogurt, granola, etc.
