Stewed Strawberry Rhubarb
Stewed Strawberries and Rhubarb 🍓
Ingredients
- 3 cups strawberries
- 10-15 stalks rhubarb
- 1 tbsp lemon juice
- 1-2 tbsp Forest Juice medicinal mushroom maple syrup
*please note you can use any amount of strawberries and rhubarb and it will always turn out delicious :) you can also use and experiment with lots of different fruits!
Directions
- Place a medium sauce pan on the oven with 1-2 tsp filtered water + 1 tbsp lemon juice
- Add fruit: strawberries and rhubarb
- Place heat on medium high, mix consistently and bring to a boil
- Once at a boil, bring heat to low and let simmer for 15-20 minutes
- The fruit will slowly start to come apart, the water will evaporate
- Stir consistently (every few minutes) at stove so that fruit don't get stuck to bottom of pot
- After 15-20 minutes, your fruits will be stewed and well combined
- Add maple syrup to taste
- Store in fridge for 2-3 weeks, or freeze if making a larger batch
- If you want to thicken you can add chia seeds but not necessary
- Delicious to eat on: oats, pancakes, waffles, yogurt, granola, etc.
